The Story Behind the Bark

Inspiration: Karak Sohan Halwa — a Lucknowi confection, paper-thin in one shop in Lucknow, brought back by the Chief Mithaiwala from a Lucknow trip. The brief was odd on purpose: make an inside-out chikki. The first attempt sandwiched sohan halwa between two coats of chocolate — the jaggery caramel of sohan halwa already echoes a chikki. Sea salt came in at tasting. A day-one BSS product. Not a recreation. A structural translation of its snap, pull, and caramel density into a bark.
