Anatomy of the Kaju Bon Bon

Our Kaju Marzipan Bon Bon is multi-layered decadence! Our halwais make the Kaju Katli base in the traditional method and then roll it out like cashew marzipan. The first layer is slathered with an even layer of dark chocolate ganache and then sealed with another layer of Katli. This treat is then cut into squares using a guitar cutter in the form of a bon bon and then sprayed with a dark chocolate spray. Lastly it is bedazzled with edible gold glitter!

The Magic Behind the Mithai!

Marzipan is eaten in various parts of the world during Christmas time. When our Chief Mithaiwala traveled through Europe during the festive time of Christmas, he saw that chocolate-coated marzipan was a widely popular treat. In India as well, the Anglo-Indian community makes lots of colourful treats in the shape and theme of their choice during Christmas. While traditionally around the world you would popularly find almond marzipan, in Goa cashew marzipan is commonly used. Inspired by these two ideas, we decided to treat our Kaju Katli as the 'marzipan'. With each bite you get the buttery finish of the cashew marzipan and a dense layer of bittersweet chocolate! While making the Kaju Marzipan Bon Bon, our halwai team pays close attention while making the Kaju Katli to make sure it always it has that smooth mouthfeel and the right texture.
